A Slow Breakfast at the Terrace

Breakfast at the terrace is not a meal so much as a position. You sit where the morning light lands first, and you let the day approach at its own pace rather than yours.

The menu refuses efficiency. Bread arrives when it is ready, which is when it is warm. The egg is cooked the slow way, in a pan someone is watching. Coffee is poured with the assumption that you will want another cup and the time to drink it.

A slow breakfast is a vote cast, before noon, for the kind of day you intend to have.

There is a particular pleasure in a table set for one unhurried person: a plate, a cup, a linen napkin, a window. Nothing on that table was designed to be photographed. All of it was designed to be used slowly.

We timed it once, out of professional curiosity. The average guest stays ninety minutes. Nobody complains. Several have asked, quietly, whether the recipe can be taken home. It cannot. That is rather the point of coming.
